Special note: Fresh garlic requires different storage and handling.  It has a milder flavor, so please explore the difference between cured and fresh garlic!

Unlike cured garlic, which is what you generally see in your grocery store, fresh garlic has more moisture and needs different handling. Keep your bulb whole, dry, and unwashed in a well-ventilated and dark location. Do NOT put the bulbs in plastic bags or in the refrigerator. These conditions trap moisture and encourage sprouting, which changes the flavor substantially. Once you break open a bulb, try to use the garlic within the following 3 days, but use must use it within 10 days! If you think you will have a problem using the garlic, you can always chop it up and freeze it for using straight out of the fridge.
